Here’s how to properly cut and wash a leek before cooking with it. First, trim the root end, then the dark green tops. Slice the leek in half lengthwise. Next, wash the whole thing under running water and remove as much grit as possible from the layers. After slicing, place the pieces in a bowl of water, swish them around to release any hidden dirt.
