S grind Nakiri made from simple raw materials. Arizona desert ironwood and 52100 round bar. This tricky grind has very precise geometry with 2 hollow grinds above the primary bevel creating an air gap behind thinly sliced vegetables so things won’t stick to the side of the blade when slicing and dicing. Traditionally Nakiri’s have a fairly flat profile for push cuts. This time I made the profile have more of a curved edge for smooth rocking motion slicing and dicing.
